Mini Chocolate Chip Cookies – Makes 40/45

Ingredients:

- 125gr butter, chopped
- 1 teaspoon vanilla extract
- 1 ¼ cup firmly packed brown sugar
- 1 egg
- 1 cup plain flour
- ¼ self-raising flour
- 1 teaspoon bicarbonate of soda
- 1/3 cup cocoa power
- ½ cup white chocolate chips
- ½ cup dark chocolate chips
- ½ cup dark chocolate Melts, halved
- Preheat oven to moderate (180C/160C fan-forced). Line 3 oven trays with baking paper.
2. Beat butter, extract, sugar and egg in medium bowl with electric mixer until smooth.
3. Stir in sifted flours, soda and cocoa powder
4. Stir in chocolates (it will look dry at the beginning but don’t worry it comes together. Use hands if needed to mix).
5. Drop rounded teaspoon of the mixture on the tray about 3cm apart. Press each with hand to flatten slightly.
6. Bake for 10 mins. Stand cookies on trays for 5 mins
7. Transfer to wire rack to cool.
Tips: Cookies can be made up to a week ahead; store in airtight container (the closer to the date the better though).
Nuts and raisins can be added to this recipe. Dark chocolate can be replaced by milk chocolate.
